Rod’s Chicken Curry

Join Rod as he whips up his easy Chicken Curry!

What You’ll Need

Ingredients:

  • 1 onion

  • 1kg diced chicken thigh fillets

  • 1 pk frozen spinach

  • 3 potatoes
  • 1 jar madras curry paste

  • 2 tins crushed tomato’s

  • 1 tea spoon chicken stock

  • 1 tea spoon of lemon juice

Utensils:

  • Chopping board
  • Slow cooker
  • Large spoon
  • Knife
  • Scissors

Method

  • Dice onion
  • Cut potatoes into quarters
  • Set slow cooker to Medium

  • Add diced chicken, onion, curry paste to slow cooker and mix through

  • Add tins of crushed tomato’s and frozen spinach mixing through

  • Stir in chicken stock and lemon juice

  • Simmer in slow cooker for approx. 4hrs on medium

  • Cook rice, boil/rice cooker

  • Add curry onto rice
