Simone’s Vegetarian Fajitas

Fresh, simple, light and nutritious fajitas to spice up the kid’s meal plan! 

What You’ll Need

Ingredients:

  • 1 can of red kidney beans
  • 1 pack of soft tortillas
  • ½ packet of fajita flavouring
  • 2 zucchinis
  • 1 red capsicum
  • 1 brown onion
  • 1 lime

Utensils:

  • Vegetable chopping board
  • Knife
  • Stove top burner
  • Pan
  • Fork
  • 1 large bowl and 1 medium bowl
  • Strainer

Serves 5

Method

  • Pour one can of red kidney beans into a strainer, and rinse with fresh water. Set aside.

  • Roughly chop your zucchinis, and slice your capsicum and onion.

  • Place a pan on your cooktop and turn on medium heat. Add in your chopped vegetable, and stir.

  • Once your vegetables are lightly brown, add in your red kidney beans and fajita flavouring. Stir. Once evenly cooked through, turn off the heat and set aside.

  • Carefully cut open one avocado, pick out the pip (avoid using a knife), and scoop out the avocado into a bowl.

  • Squeeze ¼ of a lime, add a pinch of salt and pepper and mash together.

  • Cut open the packet of tortillas and put it in the microwave for 30 seconds.

  • Now have some fun assembling your fajitas!
